3 Healthy Recipes to Try This Summer

So despite the sunny weather, it’s important to keep your immune system strong and your body healthy. We’ve compiled a few simple recipes that will keep you feeling your best all summer long.

Grilled Rosemary Chicken Skewers

Chicken is one of the many foods people enjoy grilling over the summer — and one of the healthiest meats to eat. And with this added rosemary flavor, this recipe is sure to become a summer favorite.


  • 2 lbs boneless chicken, cut into 1 1/2 pieces
  • 1/2 white onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp minced rosemary
  • 1/2 tsp crushed red pepper
  • 1 tsp dried Mexican oregano
  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • Salt
  • Pepper
  • 8 rosemary sprigs

To start, mix the onion, garlic, red pepper, minced rosemary, olive oil, lemon juice, and oregano in a mixing bowl, keeping 1/4 cup of the marinade separate. Add salt and pepper and put the chicken in the marinade for about 30 minutes, covered. Once marinated, put the chicken onto the rosemary sprig skewers and baste with marinade occasionally while grilling. Cook until done, about 20 minutes, and enjoy!

Veggie-Packed Macaroni Salad

Macaroni salad is a summer staple, but it can also get pretty unhealthy when it’s packed with heavy ingredients like mayonnaise. But this recipe uses less mayonnaise than normal and is full of veggies, making it both healthy and delicious.


  • 3 cups cooked macaroni
  • 1/3 cup celery, diced
  • 1/2 cup tomato, diced
  • 1/4 cup red onion, minced
  • 1 tbsp minced parsley
  • 1/2 cup mayonnaise
  • 3/4 tsp dry mustard
  • 1 1/2 tsp sugar
  • 1 1/2 tbsp cider vinegar
  • 1/2 tsp salt
  • 2 tbsp sour cream
  • Pepper to taste

One of the best things about macaroni salad, besides the taste, is how easy it is to put together. Combine solids and liquids in separate bowls and once mixed, add them together. Add salt and pepper to taste and it’s ready to serve.

Peanut Butter Cups

It’s no surprise that Americans love peanut butter. In fact, Americans consumed about 120 million pounds of peanut butter each year between 2008 and 2014. So if you’re one of the many people who love peanut butter, you’re sure to love these healthy peanut butter cups.


  • Coarse sea salt
  • 1/2 cup creamy peanut butter
  • 12 oz bag of semisweet chocolate chips

Not only does this recipe have just a few ingredients, but these peanut butter cups are easy to make too! Melt the chocolate chips in the microwave or on the stove until smooth. After lining a muffin pan with muffin tins, pour about a tablespoon of melted chocolate into the cups. On top of the chocolate, add a quarter size of peanut butter, then cover each with more chocolate. Top with sea salt to taste and pop in the refrigerator to harden before eating.
